Lemon and raisin muffins lactose, wheat, gluten free

Lemon and raisin muffins lactose, wheat, gluten free .

Makes 18 muffins.


  • 2 medium eggs
  • 1 flat tsp salt
  • 420 grams self raising flour 
  • 220 grams caster sugar
  • 100 ml vegetable oil
  • 260 ml lactose free milk
  • 8 tsp lemon juice
  • 1/2 tsp baking powered
  • 120 grams raisins


Preheat oven to 200 degrees, line your baking tins with muffin cases.

In a bowl place the eggs and sugar whisk until combined, add the salt, vegetable oil, milk and lemon and continue to whisk.

Gradually add the baking powered and flour keep whisking until no lumps are found finally add the raisins and stir.

fill your cake cases around 3/4 full, then place in the middle of the oven and cook for around 15 minutes, to check if cooked place a skewer in the middle and if it comes out clean they are ready.

Makes 8 portions (cost 56 pence per portion. )


  • 3 chicken breast 
  • 4 slices of bread
  • 2 eggs
  • 100 grams plain flour
  • 2 garlic cloves
  • 1 tsp mixed herbs
  • 100 ml vegetable oil


In you food processor place your bread, garlic cloves and herbs, mix until you have fine bread crumbs place in a bowl.

Whisk your 2 eggs together in a separate bowl and place to one side.

In a third bowl place your flour and set all three to one side.

slice your chicken breasts into nice thin strips ( they don’t have to be perfect.)

In a row place chicken slices, flour, eggs then bread crumbs.

start off by flouring each chicken strip then dip into the egg and finally bread crumbs making sure you cover the chicken in all three.

in a frying pan place a small amount of oil to cover the bottom of the pan cook on a high heat, place in your chicken strips once hot and cook and each side for around 3 minutes (or until golden) and serve with whatever you like i had a basic salad.


Dairy free chocolate mousse

Makes 4 servings.


200 grams dairy free dark chocolate.

6 egg whites.

1 teaspoon orange juice (or lemon.)

50 grams caster sugar.


Melt the chocolate in a bowl over a pan of boiling water, try not to let the bowl touch the water.

Next in a bowl place the egg whites and orange and whisk until soft peaks are formed. 

Gradually add the sugar continuing whisking until it forms firm stiff peaks.(basically you can tip the bowl upside down and it wont fall out.)

Remove chocolate of the heat once melted allow to cool for a few minutes, then place half the egg whites into the chocolate and fold until mixed add the second half continuing to fold until done try to keep as much air in the mix as possible.

Place into dishes place in fridge for around two hours.



Quick and easy to make low cost lactose free fishcakes for all the family to enjoy. I made 16 fishcakes for £3 but this recipe is to make 8 perfect for a family of 4.

Ingredients you will need

250 grams white fish  (i used frozen white fish).

170 grams white potato diced (keep the skins and make chips.)

50 grams white bread lightly toasted. (made into bread crumbs)

1 teaspoon mayonnaise.

50 ml lactose free milk

250 ml water

1/4 teaspoon dill

1/4 teaspoon parsley

salt and pepper to your own taste.

large eggs whisked.

50 grams plain flour.

100 ml vegetable oil .


Place the fish,milk and water into a pan cooking on a simmer for 20 minutes, at the same time cook the potatoes in a separate pan for the same length of time or until soft. Once cooked drain both and allow to cool.

In a large bowl place the mayonnaise, dill, parsley, the now cooled potatoes, fish, salt and pepper, using a fork crush it all together until no large lumps are found.    

Place your flour, eggs, and breadcrumbs in separate bowls.

Getting a small handful of fish mix, make a ball in your hands and gently squash together to make a disk shape, aim for around 1 cm thick and 5 -6 cm round (they don’t have to be perfect). lightly coat in flour and set to one side, once you have made them all coat in egg then bread crumbs placing them aside again.

place all the oil in the pan waiting until hot then carefully place the fishcakes in, turning over only once until lightly brown (or how you like them cooked).



lactose free strawberry cheesecake recipe

Try your hand at making this delicious lactose free cheesecake, this is a no bake light cheesecake perfect for all the family.


Preparation time is 25 minutes fridge time 4 hours, makes 8 large servings.


200 grams digestive biscuits.

70 grams  vita lite margarine.

250 ml lactofree single cream.

150 grams lactofree soft cheese.

140 grams icing sugar.

200 grams fresh strawberries.



Place digestive biscuits in a bowl, crush till they look like bread crumbs.

Melt all the margarine then mix with the biscuit crumbs.

Line a loose bottomed baking tin and spread the biscuits around the base gently pressing down on the top then place in the fridge.



While that is setting, place all the cream into a large bowl and whisk until it forms soft peaks, slowly add soft cheese and icing sugar and continue whisking until no lumps.

Dice up 100 grams of the strawberries  and place it into the mixture  whisk until slightly pink.

Place on top of biscuit base and decorate how you like and put it back into the fridge for at least 4 hours,

Tuck in and enjoy.

cut price Barrys discount food shop

i have just discovered this company and though i would give it a go i spent £50 including delivery on cupboard stock really juice, crisps,  biscuit, noodles, cereals etc. I decided i would do i price check to see how much i saved it worked out i saved a massive £56 if i ordered though the supermarkets and that is not including delivery etc. My order arrived within 4 days of ordering and they even rang me when they had ran out of a product to let me know and ask what i would like instead or a refund for that amount, customer service is great and very polite.

so what is cut price Barrys basically this shop sells nearly out of date or just out of date food at around half the cost of the supermarkets, delivery is only £3.99 for up to 25kg and they also take paypal which is great when trying a new shop.

safe to say i will be using again.

sanctuary spa purifying charcoal shower burst

I signed up to talk to mums about 6 months ago as they pay you to hand out free samples to other mums and dads, they also offer free samples every now and again, if accepted you get the product  leave a review no money though just free goodies. I received my  sanctuary spa purifying charcoal shower burst this morning expecting a sample size bottle and received i full size one. Average price seems to be between £5 -£7 which for this mam is quite a lot  i rarely ever spend more then £1.


I put Matthew to bed and decided to jump straight in the shower, it first comes out the tin like a  thick black gel and once mixed with air and water becomes a white foam that feels like silk on your skin. and leaves you smelling nice my skin is softer and feels cleaner.One bit of advise is if you have a cut or sore anywhere on your body try and use something else as it really stings even after an hour out of the shower.(lol)

over all so far this is one of the best i have ever used and if i can find lots of discount vouchers i will stock up and post on here.


So on Monday i took my son to Round the twist in Benton  as its the school holidays and one of his best friends fourth birthday.

So the admission price was £6.95 quite high in my eyes for a four year old, as it was are first time going  we went in and it was really busy and very loud, looked clean and tidy though. Half hour in my son wants to go on the go karts so i walk over with him and i am informed it costs an extra £1 a go gave them some money and Matthew really enjoyed himself on them. My thoughts are if you are paying nearly £7 to get in they really should be free.

Food prices are not to bad however my friends kids pizza was half a bread bun instead of a pizza base. Toilets were also nice and clean however with it being a very busy soft play you need more toilets and possibly some smaller ones for little bums . All staff were really friendly and easy to talk too.


over all experience was very good and will probably return when off peak as it is cheaper.

preschool and nursery

When Matthew turned two he started the local preschool on his 15 free hours, Then last September he started the nursery that was attached to his school. Today i received his learning journey book to bring back and basically it looks like he never learnt anything at all in the 9 months at the school which is not great.

His school basically updated his file once a month and his class size is stupid at over 35 kids with only two main teachers and one full class assistant and two single child help.

However his preschool was great we had 4 to 5 teachers with no more then 15 kids in the classes and Matthew loved it and was constantly learning new things, his file showed it too with nearly daily updates of his progress.

safe to say if we ever had another child we would just stay with preschool till reception class.
