Low Cost Lactose Free Homade Fishcakes

Quick and easy to make low cost lactose free fishcakes for all the family to enjoy. I made 16 fishcakes for £3 but this recipe is to make 8 perfect for a family of 4.

The Method

Place the fish,milk and water into a pan cooking on a simmer for 20 minutes, at the same time cook the potatoes in a separate pan for the same length of time or until soft. Once cooked drain both and allow to cool.

In a large bowl place the mayonnaise, dill, parsley, the now cooled potatoes, fish, salt and pepper, using a fork crush it all together until no large lumps are found.

lace your flour, eggs, and breadcrumbs in separate bowls.

etting a small handful of fish mix, make a ball in your hands and gently squash together to make a disk shape, aim for around 1 cm thick and 5 -6 cm round (they don’t have to be perfect). lightly coat in flour and set to one side, once you have made them all coat in egg then bread crumbs placing them aside again.

place all the oil in the pan waiting until hot then carefully place the fishcakes in, turning over only once until lightly brown (or how you like them cooked).

Ingredients Required

250 grams white fish (i used frozen white fish).

170 grams white potato diced (keep the skins and make chips.)

50 grams white bread lightly toasted. (made into bread crumbs)

teaspoon mayonnaise.

50 ml lactose free milk

250 ml water

1/4 teaspoon dill

1/4 teaspoon parsley

salt and pepper to your own taste.

2 large eggs whisked.

50 grams plain flour.

100 ml vegetable oil .
