Sausage Casserole

Sausage Casserole is a quick and easy low cost dish for all the family to enjoy, great for getting veggies into kids.

The Method

To start by dicing all of your root vegetables and place in a deep oven dish, add in your sausage and then set it to one side.

In a large pan on a high heat place your oil. Once hot add your onions and garlic cook until onions start to turn transparent then turn the hob down to a medium heat. Add Worcester sauce, chopped tomatoes, tomato puree, all the herbs and spices, water and stock cubes stirring as you go bringing it to the boil.

Once boiling carefully pour the mix over the vegtables and sausages, this should cover them completely. You can then give the vegetables a quick stir and add bay leaves to the top (so you can find them quicker).

Cover with foil and place in the oven at 200 degrees for 45 minutes.

After that time has past remove the foil and contine cooking for 20 more minutes.

Remove the bay leaves and enjoy.

3 medium potatoes

3 carrots

1 parsnip or 1/2 swede

1 medium leek

8 sausages

2 tablespoons vegetable oil

1 small onion diced

2 garlic cloves crushed

1/4 teaspoon paprika

1/4 teaspoon chilli powder

large pinch of mixed herbs

2 tablespoons Worcester sauce

400 gram tin of chopped tomatoes

3 chicken stock cubes

400 ml water

1 tablespoon tomato puree

2 bay leaves
